The first thing you should do is to get yourself an old joystick, one that you are familiar with.

There's no perfect stick as It's all down to personal preference.

Don't give up on the 8833 too easily. I've recently repaired two failing amiga monitors without much expense or expert knowledge. Youtube is your friend here! I have no experience with expensive up scalers, especially anything that uses the amiga monitor port. Buying an old CRT is a good option, but...

For the last 20 years I've used something like this:
